At first, the projection was a beautiful and powerful pony, but the projection soon rot into a dark, wrathful pony who sought only to control others. She ordered her guards to escort her out, but Sunset defeated the guards without even trying and finally jumped into the mirror she was so obsessed with, tansporting her to the world of humanity.

What makes this deleted scene interesting however is the fact that Sunset sings about whether or not she belongs in the human world any more. Should she stay or should she go? That is the question. Where do I stand on this?
Personally, I believe that Sunset should not return to Equestria. I will try my hardest to keep my own preferences out of this discussion so that I may try to see what the next Equestria Girls film has in store for our subject. Expect a lot of speculation.
Oh, spoilers for Friendship Games and an old Disney movie below. Then it hit me. Please bare with me here.
He sings a song about wanting to rejoin his father and the other gods on Mount Olympus. The rest of the film is his journey to accomplish this. Along the way he makes friends, falls in love, and ultimately saves the world.
By saving the world he gets the status of a god and earns the right to return to what he believes is his home. In the final scenes, however, he realizes that living on Mount Olympus means he can no longer be with his friends or the woman he fell in love with. He returns to his friends and supposedly lives a happy life.
Now you may be asking yourself what this has to do with our bacon haired pony turned human. She says that she misses the magic, quests, and the mythical beasts back in Equestria. Sunset realizes that she has a good life in the human world but she still feels out of place.
Hercules is having a rough time fitting into human society due to his strength but he is still happy because he is loved by his adopted parents. Both Sunset Shimmer and Hercules know that there is something greater out there waiting for them. What I took away from the deleted scene is the notion that Sunset Shimmer is going through an internal struggle.
Looking back at the Friendship Games there is a scene that may clue one in on how Sunset is fitting in with the human world.

Dispel Magic : In her Golden Super Mode , she has the ability to fix the tears in reality made by Midnight Sparkle with magic of her own. And yet, through it all, she tries her very best to shed her old self and become as supportive of her friends as possible. This eventually works out by the end when she joins the Rainbooms in defeating the Dazzlings, leading to her bad reputation beginning to dwindle and her staying in touch with Twilight through her book. In the end, she decides that her purpose in life is to help people. Easily Forgiven : Zig-Zagged. Even Principal Celestia, who had been more tolerant of her in the first film, has it in for her now. Elemental Punch : As Daydream Shimmer, her first attack towards Midnight Sparkle is a Rasengan-esque palm strike as both girls thrust their magic charged hands forward and crash into each other in mid-air. Incidentally, a similar type of clash is also a very iconic occurrence between The Hero and his Rival in Naruto. Establishing Character Moment : Each of the first three films opens with a scene focusing on Sunset Shimmer either before or after the opening credits, to show her Character Development in various stage of progress. Then before entering the mirror portal, she says to Twilight "sorry it had to be this way, Princess," sneering the last word. This sets her up as clever, ambitious, knowledgable about the Elements, powerful enough to rival Twilight teleportation is a rare skill , and derisive of Twilight and her status.
