Александр Раппопорт решил сделать заведение с четкой продуктовой концепцией — в обновленном Erwin подают блюда из рыбы и морепродуктов. Причем большая часть и рыбы, и всяких морских гадов, выловлена на территории России. В меню — сахалинская креветка, камчатский краб, архангельский клыкач, муксун, нельма и байкальский омуль. Можно подойти, показать пальцем — и выбранный вами огромный лягушачий краб отправится в руки поваров. Дизайнер Анастасия Землянская внесла в интерьер много подобных «водных» элементов — например, на одной из стен изображены обитатели разных морей, на потолке — девушки в круглых очках и красных купальниках, часть мебели обита тканью цвета морской волны, с нулевого этажа на первый проходит анфилада с рыбами. Эта китчевость становится до боли в зубах предсказуемой, однако пространство Erwin явно стало веселее.

В нем 11 разделов с затейливыми фирменный стиль Раппопорта присутствует и тут названиями: «Строганина, крудо и прочие сашими», «Рыба соленая», «Не очень рыба, не очень горячая», «Крабыракикреветки». Готовят все, что можно приготовить из рыбы и морепродуктов — строганину, сугудай, тартары, сашими, тирадито, гриль, при этом стараясь не отрываться от корней — например, керченскую кефаль и нарские миноги дополняют простой и понятной картошкой, а в мисо соус для архангельского клыкача добавляют алтайский мед.
